Tomato bruschetta - Bruschetta al pomodoro

 

You’re feeling lazy, have no time, or are going crazy in the heat… and yet you still need to make something for dinner? Here’s a great Italian favourite: simple, fresh, delicious and beautiful. Like the best of Italian cuisine.

 

Tomato bruschetta – Bruschetta al pomodoro

 

Ingredients:

5 or 6 vine ripened tomatoes

Garlic, two cloves

Fresh basil leaves

Extra virgin olive oil

Salt, pepper

Country style loaf of bread or ciabatta bread

 

Instructions:

Chop tomatoes, place in a bowl with torn basil leaves, some black pepper and one clove of chopepd garli. Cut bread into slices. Heat a griddle pan and toast bread on it, both sides, until nicely brown and slightly charred. You can do this on a barbecue obtaining a great result.Cut the end off remaining garlic clove and brush it over the bread slices. Drizzle with olive oil, place on a serving dish and spoon over the chopped tomatoes. Sprinkle with salt and serve.
